have both iPhone 12 and iPhone X updated to the latest firmware. Use both my devices with the same backup file.

problem is that right now the latest version of iPhone 12 is 15.1.1 but the latest available version on iPhone X is 15.1 (since 15.1.1 is only for iPhone 12-3) so the backup created on 15.1.1 cannot be restored on the device with 15.1.

Any thoughts on how to restore the backup created on 15.1.1 To the device that the latest firmware is 15.1?

You’ll have to update the 15.1 device to the next release of iOS when it becomes available
 
I had the same issue, but found this: https://discussions.apple.com/thread/253425238

"If you're trying to restore a backup made from 15.1.1, create one on a computer, make a copy of it, open the info.plist file in the original in a text editor, and change the 15.1.1 to 15.1 inside."
Did this method work for you? The OP doesn't mention whether it solved their problem in that thread
