I’m finding that network requests occasionally hang and I have to turn WiFi off and on again to get data to start flowing again.

This happens in multiple apps (including Safari) and on multiple different networks. I have restarted the phone since the problem started.
I didn’t have the issue on my previous phone, an iPhone 6S Plus, which was on iOS 14.

Curious to hear from anyone having similar issues or who might have solutions.

I noticed that turning off Private address fixed my issues

Try doing Reset Network Settings if you have not done so already, it might help.

Thanks for this suggestion, I've given that a go and eventually had the same problem again.
Do you get the same issue when connected to cellular? Does the issue happen on all the WiFi networks you have been connected to or just certain WiFi networks?

I have started to notice this behavior recently as about few days ago. And I have to usually turn off the wifi and turn it back on or reboot the phone if it does not work. OP what router are you on? Being that I am at home I am leaning towards my ORBI Mesh causing the issue as I have not been out long enough to repeat the issue.

Having recently gotten a MacBook Pro M1 Pro as well I notice very similar problems with that.
