Ok, yesterday I jailbreaked my iPhone 3G with the 2.1 update, how can I unistall programs downloaded from Cydia?

Also I just downloaded OpenSSH and installed it and now I have a POOL game icon .

I need to remove a few programs but don't know how
 
In Cydia there is a manage tool. Moderately self-explainatory once you click that. Find the package you installed, instead of an "install" button it will now be "modify." Click it.
 
In Cydia: on the bottom toolbar, click on Manage, then Packages, then choose what you don't want, and on the right where it says "Install" there should be a Modify, click on that. and click on UnInstall. or Remove I think is the actual word.
 
In some applications you may keep tapping on the Icon and it will start blinking and an X icon will appear on the icon's corner, press it and it will uninstall the application.
 
I have the same issue with the pool game icon. Have you found a way to unistall it? I know how to uninstall stuff from cydia but i don't see the pool game. Perhaps it's under a different name in which i can't find it.

Oh that one's an effen pain, happened to me too. I had it there until I upgraded my firmware. Now that I know more about the file system, I'm sure you can delete the package by SSH'ing to the device and deleting portions of the app manually. The developer put Pool on the App Store and as such, stopped dev on teh Cydia distribution. They should really remove that one. :)

Try looking in:
/private/var/mobile/Applications

There will be a bunch of strings like: 0495940B-D918-4910-8C38-xxxx-xx-xxx

Open those folders up and see what .app you find. This is just a guess but if you delete the 0495940B-D918-4910-8C38-xxxx-xx-xxx folder it may uninstall the app. :)

When I was creating themes and needed to verify the .app name to create icons for, I needed to go here.

this app can be removed by going into installer->featured->Adikus Pool (highlight) -> use uninstall feature
