Ok 2 questions

1. Is 500mb enuf for a data plan? (including the fact i will be using cydia when jailbreak is out)

2. How much mb does youtube, safari, maps, etc take up?

500mb / month should be enough. However, it solely depends on how much you use those apps. If you plan on tethering, go unlimited.
You could try that plan and keep track of your usage (settings>general>usage).
