I have an iPhone 4 with the 5.1.1 jailbreak. I'm looking to get an iPhone 5 at some point, but know that the jailbreak most likely will not be released until 6.1 comes out. My dad just bought an iPhone 5 and it came with 6.0.2 installed. Part of me thinks I should get the iPhone 5 as soon as possible, because once 6.1 is released, all the iPhone 5s will come shipped with 6.1 installed, and I will be out of luck. Should I go ahead and buy the iPhone 5 now, before 6.1 is released?
 
Buy the iPhone 5 and don't use it yet? That way you have it on the firmware you want and don't have to use it yet. Plus Apple rarely ships phones with the most up to date firmware - it takes a few weeks for the newest firmwared iPhones to arrive at retail locals.

That's quite true, haven't thought of that, so I will just continue waiting for the Jailbreak to buy my iPhone 5

I think the JB will probably be for 6.1, that's speculation based on history though.

Even if 6.1 is released and the jailbreak is for 6.0.2, if you buy an iPhone 5 within days of 6.1 being released, you'll still get an iPhone 5 with 6.0.2. Their supply chain lags behind by weeks, as said above.
