iPhone iPhone 4S 5.1.1 Restore Problems

I have a Jailbroken 4s with 5.1.1, and I recently upgraded to the 5 so I'm intending to sell it.

Ideally, I'd like to jailbreak and unlock before I sell it.

I was trying to restore the phone first, and the sim is removed although i still have it, just didn't want to activate the phone since I'm using the 5 now. So when i boot up it takes me to the welcome screen and I get the "no sim" error. I can bypass the screen with the emergency call trick. However when I go into settings and click "Erase iPhone" it doesn't work. It just spins and spins and never does anything. So I can't even erase my info off the phone.

What's the best way to get my information off this phone, and jailbreak/unlock?

Put the sim in and erase all settings.

Wait. I read its already jail broken. Do not select erase all settings. This will brick the phone.

You have to manually erase all the content.

To restore to 5.1.1 again you would have had to have installed 5.1.1 on a computer with iTunes and not OTA in the first place. If its a iTunes 5.1.1 then you can save your blobs with tiny umbrella and create a custom ipsw with redsnow. You could restore the phone with a custom 5.1.1 you made with iTunes and set up as a new phone and its factory fresh. Then use absinthe to jailbreak.

check in cydia top of main page which SHSH's you have.
If you have SHSH's for 5.1.1 you can restore using those.

If you upgraded to 5.1.1 with iTunes(not OTA) than you can restore your phone through redsn0w

donwload latest redsn0w 09.15b3

download 5.1.1 IPSW

open redsn0w
got to Etras/even more/restore
select the 5.1.1 IPSW
follow instructions

during process select remote blobs

I tried to download RedSnow and restore, when I try to enter DFU mode it says "not supported by iPhone 4s" - then I downloaded the 5.1.1 IPSW and if i try to restore to that it says IPSW not compatible with this version. All I want to do is restore this phone, preferably to still be jailbroken, with my info wiped. i'm getting rid of the phone.

If redsnow doesnt let you restore to the same version then your only option is to either delete all your stuff manually or restore it to the latest 6.0.1 and sell it.
