If I jailbreak with Redsn0W can I perform an unlock with Ultrasn0w on a 4S with baseband 2.0.12?

It's locked to Vodafone UK

No. Ultrasn0w is only for older iphones with compatible basebands. If you want to unlock, you best at getting a factory unlock from Vodafone UK (http://campaigns.vodafone.co.uk/UnlockCodeRequestForm/) or get the geveysim. (http://www.geveypro.com/shop/) A facotry unlock is way better than geveysim since you don't have to worry about updates and stuff. But for geveysim, you must have a compatible firmware and baseband which you have since you have a baseband I assume you have 5.1.1 firmware. I hope I helped! :)

I would like to do a factory unlock via Vodafone but they don't recognise the device as being associated to my account and won't unlock it unless I call them and update the device details on my account, but when I call them they don't know what the ***** I'm on about when I call them lol
 
Ok everyone with questions launch Cydia, search for ultrasn0w and READ what it says. It lists every baseband and iphone model it works on.

I see. Then your best bet is go with geveysim.
