I made a short video on my wife's phone, then put the phone in my pocket without shutting it off.

Now her email is not there. It’s an "hername"@gmail address.

When I touch the "Mail" icon, I get a screen that says:

“Welcome to Mail”

Then below that, there is a list:

iCloud
Exchange
Google
YAHOO
Aol.
Outlook.com
Other

Her Samsung tablet has the same email address as her phone. I can receive test emails on her tablet from my Mac.

On her apps, there is an icon with a large M that says Gmail under it. It works, but the address is "hername9"@gmail, so she doesn’t use it.

Sounds like the email account might have gotten deleted. You should be able to go to Settings > Passwords & Accounts and check to see if the account might still be there. If not, you can add it by adding her Google account.

You can also go to the Gmail app and sign out of the account that's there and sign in with her account if you want to use that app.

What iOS version is it running?

You can probably also check something similar in Settings, like Mail or something like that.

No, don't use that link, that's way to much of a hassle.
Just do the following:

1. Go to settings
2. Go to mail
3. Go to accounts
4. Add account
5. Select Gmail
6. Enter credentials.

and you're done :)
