I bought the iPhone 5S (Verizon) almost 2 weeks ago and it came pre-installed with iOS 7.1.1 and the latest is 7.1.2, and I used Pangu for untethered jailbreak from en.pangu.io and I did not update to the latest of 7.1.2. That was two weeks ago. So, should I wipe the iPhone 5S and than should I use iTunes to update to 7.1.2 or should I get the IPSW and do it custom and than run Pangu again? Or should I not bother and just keep it untethered on 7.1.1?

I'm still on 7.1.1 myself. The only real difference is the mail encryption patch. You can just download that from cydia if you want.

There's no harm in restoring and updating to 7.1.2 and re-jail breaking, but it's not going to make much of a difference.
