This seemed to turn off auto brightness for a while. However a few times since i've done this i've grabbed my phone only to note it being damn near pitch black. When i've checked the brightness setting it's rock bottom, literally zero, yet i've not changed it any at all, so i have to then manually raise the setting.

What's the deal? Is this a 12.1.2 bug? My wife on 12.1.1 doesn't have this issue with her 6S.

On a side note, auto brightness seems a bit strange. For some reason my phone thinks that when i'm outside & it's bright, i need a lot of brightness, yet when i'm inside and it's a bit dark, i need no brightness. A bit back to front. One of the reasons i turned auto brightness off.

My wife has a 6s+ running 12.1.2 and no problem with auto brightness. Likewise with my 7+. Did you try resetting the phone?
If by reset you mean totally erased then yeah this was done immediately before updating to 12.1.2 about a week or so ago, certainly within the past couple week.
