i want to update it on ios 12 but it says i can only do it from itunes.

i dont have a desktop computer or laptop. only ipad pro 12.9

how do i do?

I have a 6s on iOS 9 and it says the same. You cannot do it via OTA. You have to get your hands on a computer with iTunes.
PS: I wouldn't recommend you to update.

To change the battery at apple store you need ios 12

This is the first time I heard Apple forces you to update to replace the battery. So far, they told you that if they broke it they'd give you an updated one, but AFAIK, they don't specifically request you to update before bringing it in.
Did they specifically request it when you went to the store for a replacement?

I mean how do you find the battery life? Does it last you the day?
Also, you can check battery health through the battery life app. Look it up on the App Store.
