Just updated an iPhone 8 to iOS 14 - it was a refurb and I had not tested the phones operation, regretting that now.

This is the bug: audio over the normal (ear) speaker in the phone app works fine, however if I switch to speaker mode then back to the normal speaker, it no longer makes any noise out of that speaker in the phone app. Other apps that use that speaker work.

Rebooting fixes it immediately, and if I wait for a while it begins working again in the phone app.

Any ideas?

Not sure if this is what you're referring to....

But sometimes when I try to switch speaker mode to private mode while on a call, it does not work. Other times it does work. However, I mostly keep my iPhone 8 on speaker mode since I use it from my desk.

It seemed to work more consistently when I was using a 7+. I haven't tried the same thing from my wife's iPhone 11.

Not quite. I'll try to rephrase.

There are multiple audio options depending on what the iPhone is connected to, but at it's most basic there are two options - "earpiece" speaker and speakerphone. Earpiece is when you are holding the phone up to your head.

If I answer the phone and leave it on the earpiece (the default) sound can be heard through it.

Switch the audio to speakerphone. Audio is now heard over the bottom speakers as you would expect.

Switch back to the earpiece, and no audio comes out of the earpiece speaker.

Wait some time (10 minutes?) and the phone app plays audio normally. If you try to use the phone app too soon, no audio comes out of the earpiece, but speakerphone works.

Since no one has responded... I get the feeling that this isn't a bug - at least one see by many others. I'm debating whether to request a replacement iPhone, or if I should wait for a software update. I think I have 80 days to request a refund - I'm sure we'll see a software update soon.
