I have recently cracked my screen on my iphone 8 plus, if i buy a new screen (official Apple) would I be able to swap my original home button to the new screen and would the fingerprint sensor still work?
 
You need to transfer over the Touch ID, front camera flex, earpiece and the metal shield plate.

With the 8 series, you will also need to transfer the LCD EDID to maintain True Tone functionality. There is a simple tool for it, search online.

Yes that will work. If the screen came off another Apple phone or is a reconditioned Apple screen off an old phone then it would be a genuine Apple screen. If your purchasing it from a 3rd party then it might be oem but it not a genuine Apple screen as they don't sell parts to anyone who isn't an authorized Apple service provider. Also, you will lose tru-tone and your new screen won't be calibrated. These are only available if the screen is replaced by Apple. Touchid will work fine though since you are using your original home button

Apple calibrates the screen similar to the way a computer screen is calibrated. I've heard of people saying that the screen looks washed out or not as vibrant when calibration isn't done but I can't speak from experience. I do know that tru-tone will not operate anymore though. Apple pairs the screen to the phone and for some reason when this process is skipped, tru-tone is disabled. Some 3rd party have the pairing tool but the calibration equipment is proprietary
 
Thanks for your help on this, I’m not too fussed about the tru tone as long as the fingerprint sensor works that was my main worry
