It seems either would be good. What would make one better than the other?

If my iPhone is plugged in at night and sitting there, what would the advantage be in syncing/backing up to iCloud vs my Mac?

If you back up to iCloud, you only have 5GB, if you back up to your MBP you have a whole lot more for free. Since a lot of my content does not come from iTunes, I have to back up to my MBP anyway to sync, so I'm going that route.

My backup is only about 3 GB out of the 30 GB of stuff I have on the phone. It'll be different for everyone, but I imagine most people will be fine with 5 GB.

(But of course, I don't know how much space Photostream will end up using. So there's that.)

I'm pretty sure photo stream doesn't count against your quota. I only had about 3GB myself as well when I tried it, but then again, I didn't even think I had anything extra that would require using more space at this time. So I suspect over time as more things want to use iCloud, the backup portion could cause you to go over pretty easily. You never know though. I could be wrong. It will be easy to turn off and sync to your computer if/when you do start to run out of space to free up for the non backup related files that go against your iCloud quota.
