Apologies if this has been asked before but I am new to Big Sur.
When I back up my iPhone to my MacBook I only seem to get one back up. In other words the backup gets overwritten rather than create additional back ups. Is that how it should be?

In the Finder, go to the Go menu > Go to Folder and paste in this path:
~/Library/Application Support/MobileSync/Backup/

This is the iPhone backups location, and you should see multiple versions if you've backed up multiple times. In the Finder when you select your iPhone, and then tap Manage Backups, you should also see a list of recent unique backups.

Yeah I did look in there and there only seems to be one folder despite the fact that I have backed up several times.

Yes this is the normal procedure - but - you can “archive” an existing back up manually which adds the date to the file name - then the next backup will not overwrite the existing archive back up - click “manage backups” then CTR + Click on the current back up and choose “Archive Back Up”
