No doubt asked before but is there any web browser for the iPhone that would display the desktop version of websites instead off the cut down mobile versions some sites insist on displaying?

Mobile Safari renders full websites just fine (minus Adobe Flash elements) most of those sites have an option, usually at the bottom of the page, to switch to the "regular" version of the site.

There is also usually an option to remember this preference.

If you jailbreak, you can use UserAgent Faker to convince websites you visit that you're using a real browser. Otherwise, you have to rely on sites to give you a link to the real page (which they will not always do, sadly).

This is the sites fault, not the browsers. Good sites (See: Amazon) will load the mobile site by default, but have a link to the full page.
 
Some sites do offer that link to the full version, many don't - very annoying.
Can't be bothered jail breaking either. Maybe 4.0 when it arrives will add a option.
 
I have Mini Browser and Perfect Browser installed on my iPhone, I guess they changed the restriction.

(However, for the OP, they both identify themselves as mobile browsers when requesting websites)

The restriction is not on browsers, it's on non-Webkit browsers. Any third-party browser has to be based on the same webkit framework that renders web pages in MobileSafari.
