iPhone/iPad backing them up

I’m having a hard time backing these up. I can’t figure out if it is even working. iTunes has the display across the top telling me what’s going on. Finder, nothing. I click on my iphonein left display and the tiny wheel goes around. Is this the replacement for the top display from tunes? Also I click on the auto download on the General screen turning it off but it reverts back to being on. Also want to change from just backing up important data etc. to all data but it’s grayed out. Am I screwed up or is this just poor software. Any help or ideas what I’m doing wrong would be a huge help. Thanks

I would advise contacting Apple and having them do a screen share to assist. It's kind of hard to understand what you're saying, especially without being able to see what you see.

Do you have iCloud? If so, there is no need to plug your iPhone into your Mac. Turn on iCloud backup.
