I JUST jailbroke the 2.1 iPhone 2G. I want to put a custom theme on my iPhone. I did successfully get into the SSH of the phone. I want to know how to download a theme and use it on my iPhone.

1. Download Winterboard from cydia.

2. Download themes from Cydia

OR

3. Download a theme on your computer and SSH it into /Library/Themes

4. Enable the themes u want in winterboard on your phone

ok, Lets say I downloaded a theme using Cydia(which I did). It doesn't automatically show up on the phone. Apparently I have to activate it right?

In /Library/Theme> it shows me folders of the theme's I downloaded. How do I activate them?

Download Winterboard.
Then open the Winterboard program. tap on the theme once. There should be a checkmark next to it. Then press the Home button. Wait a few seconds, and it will respring... and then the theme should be activated.

How do I set like everything to horizontal mode? like if I want to answer a text in the actualy DEFAULT SMS app, How do I make the keyboard horizontal? and also the Slide to Unlock screen horizontal?

I wouldn't mind it if the SMS/Slide to Unlock screen where ONLY horizontal, but it would be nice if it would switch using the accelerometer?

Everything you want here has never been done and I doubt it could be done unless you're an epic hex editor.
