the problem with that is that we don't know if word, excel, keynote, etc. will be available on iphones anytime in the near (or distant) future... so these files would not be openable.
I would assume files sent in email that iPhone CAN VIEW will just open in the browser. We will probably see some sort of QuickView like system in it. Not necessarily the same thing but the same idea.
Especially interesting here is the Apple acquisition of Schemasoft in 2005. They do have at least view capabilities in their arsenal, if they choose to include them.

Not necessarily, quicklook is more like preview on some serious steroids. Steve himself said that quicklook is capable of flipping through keynote presentations and I believe text documents. In addition, there will be a plug-in language that enables developers to write plug-ins for their own document types. The possibilities seem endless as to what types of files could be viewed in quick look (and it puts it closer to par with other smartphones currently on the market). If this happened, though, I see a need for a User/Documents folder on the iPhone which would be great for saving stuff from the "regular internet" too.
Add in a textedit program and/or stickes and/or some way of jotting down little notes and that would be awesome.
