I keep watching these YouTube videos of people posting their iPhone setups, I am curious how are they able to have their iPhone pop up on their Mac and they can run apps and show people how to add / change things. How do I get this to pop up on my screen?
 
The only way I can think of would be VNC software? Installed on both your iPhone and your Mac, it should allow you to connect over wifi and control your iPhone from your computer. I use Veency from Cydia and an app called JollysFastVNC on my Mac.
