So I have a 12” iPad Pro with Magic Keyboard, and I have a handful of iPhone only apps I use like Coinbase that drive me nuts. They work fine in Portarit, but 95% of the time I’m in landscape mode. Is there anyway to rotate these apps automatically? I’d rather have it smaller and more black space then have to rotate my device with the keyboard attached.

Unfortunately that's the issue with iPad. While on Android tablet you can run any app in landscape, it's not possible on iPad. That's annoying for instance for ebanking apps...

The developer will need to update their app to support iPadOS.

I’d point to the developers. The system supports it, but certain apps don’t.

Luckily most apps in my life at least are compatible with iPad and have been for many years. I’m not gonna waste my time with a phone app anymore but of course YMMV.

I get thats the right answer, but seems like Apple could do everyone a favor and make iphone only apps rotate...such a stupid issue.
Developer literally checked a box during app creation that forces the app to NOT rotate. Apple recommends NOT doing this. Apple could remove the checkbox, but then game apps that only run in landscape will act funny.

Developers should build more responsive apps, rich people should give more to charity, everyone should agree to disagree, then drink have a drink together.

In your case it is not Apple's responsibility to make a developer comply to your (and mine, I agree with you) needs, that is the app developer's job. Shouldn't take more than a weekend to do.
