I have the latest iPhone and since I got it the pictures I take have the extension .heic Is there a setting I can change so they are JPEG?
 
You can, but it's not necessary. My opinion is that HEIC much better if you would like to store/edit photos for the long term. Simply because it's more flexible to edit (convert) and without any degrade. And quality is slightly better

(And Adobe was actually slow to support HEIC.)
