Since I got the SE, I noticed that it doesn't hold a strong signal with the airpods. If the phone is in the pocket, the music cuts in and out randomly. If I'm away by say 6 feet from the phone, I also get in and out cutouts of music. I have this issue when I set the phone down in the park as I exercise. Is this normal due to older Bluetooth in the SE or do I have a unique issue?

Wow I thought it was just me! I used to daily an SE (have the XR now), and it would cut out if I was running and it was in my pocket. This happened some with my Beats X and was even worse with the Airpods. It seems to be an interference issue.
 
Yes, I’ve experienced this, too - it’s definitely hardware-related, since it’s happened on both of the SEs that I’ve owned. The issue is worst when the phone is in a back pocket, but much better when the phone is in my front pocket. I also had this theory that it would be better if I flipped the phone right-side up (headphone jack down) in my pocket because maybe the Bluetooth antenna is on the top of the phone, but my testng hasn’t shown that to have much effect.
