iPhone Sync With iCal But The Dates Never Match?? Help?

So lets say I plan an event on the 30th april and sync with my iPhone, my iPhone will put the event on like the next day or the day before and set the event for any time it likes.

So I might have lunch set at 1pm on the 30th.. And then when I sync with my iPhone I'll have a look and lunch will have been moved to 1st of may at 6pm..

Anyone know why??
