Is it possible to stop my iPhone X from reminding me to update it?

Yes, only temporarily, as the update will re-download A later time. However, you can delete the update following the directions listed below:

Settings-General-Storage & iCloud Usage-Storage-Manage Storage-iOS 11.

You can also install the tvOS beta profile on your phone and that will prevent the update from downloading and prevent the notification.

I have had the tvOS 11 beta profile installed on my X since 11.1.1, and have not received a system update notification since then (still currently on 11.1.1).

Prior to my X, I had the tvOS 10 beta profile on my 7 Plus with iOS 10.1.1 and it blocked update notifications, too. However, tvOS 10 beta profile does not seem to block update notifications when I had it on my X. Only tvOS 11 beta profile - probably has something to do with iOS version of your phone.
 
I found this out today myself. Posted a thread about it and got a similar answer when I asked why the profile blocked the update notification on my (10.3.3) 6S+ but not my dad's (11.1.2) 7.

If you turn off Wifi, I think the update won't re-download. Of course, this is pretty inconvenient for most people.

You can also install the tvOS beta profile on your phone and that will prevent the update from downloading and prevent the notification.

It is a shame that people have to figure out tricks to disable this.
