I'm heading to Hong Kong in a month and interested in buying my iphone there so i can have true dual sim feature. In terms of usability, i believe all the wireless bands are the same. My question is, can I switch to canadian appstore and use it like it was from NA? Will software be exactly the same?

Only the XS Max and XR have actual dual SIM slot. The regular XS still has the stupid eSIM.
Software is iOS, the same globally. Apple is not like Android OEMs. And yes, you can set the region to any country you want.

FYI, this is specific to China/Hong Kong version. The rest of Asia get jibbed as well with stupid eSIM (while literally no carriers support it). This is dumb from Apple's part.

I'm getting the max this Friday, but hopping I can snag one in Hong Kong. I'll be checking their website for reserve and pick up. *Cross fingers*
