Just set it up and rebooted more than a few times. Have the same issue I had with the iPhone X--I run dual-band 2.4/5.0 Gb wireless router in my house (bands are linked, same password), and both phones will only connect at 2.4 Gb no matter what I do.

My iPad Pro, iMac (2014), and MacBook (2015) all always connect to 5.0 Gb.

Any thoughts on how to force connection at the higher speed?

Seeing something similar myself. Router only shows connection to the 2.4GHz band. Two new iPhones in the house, and same for both. Using Apple AirPort Extreme.

Update: seems like forgetting the WiFi connection and re-joining allowed it to join the 5GHz band.

I've had this happen on my last couple of iphones. Really annoying! Like Popcorn said, go into wifi and 'forget' the 2.4Gz 'location.' The phone will then connect to the 5Gz always. You can do this on any device where it prioritizes the wrong band.
 
No issues for me.

Split the bands? So each has its own SSID? Eg "MyNetwork-2-4Ghz" and "MyNetwork-5Ghz".
Honestly I'm not sure that's what you call it, but I created two networks. They do have different BSSIDs. Not sure if that is exactly the same as SSID.
I have an Airport Extreme (the older model, not AC, but still quite fast at 2.5 and 5Gz). So I have one network named 'JB Wifi Network 5GHz' and 'JB Wifi Network GHz'. Each one only allows the one band. And I assigned them different channels.
I felt no need to specify the slower speed, since there are only 2 options! And I'm the only one using my network.
