Go to the iPod preferences (in iTunes) and decide how you want it to be transferred. You can have it set to automatically sync all your songs, just some selected playlists or to manually manage the songs yourself. This final option will mean that you literally treat the iPod like it's own separate library and can create playlists and drag songs to it from the regular computer library easily. I think this is what you're after. :)

The iPod will automatically sync with your library unless you change it to manually sync in the preferences as the crazy hebrew said.

If you have set it to manually update, all you do is drag the music from the list of songs in your library onto the icon of the iPod in the source list on the left hand side of the iTunes window (where your playlists, music store and library icons are).
