iPod is set to manually sync all stuff so it's not automatically copying over my voice memos I made. If I click on my device in iTunes and then go to the Music tab, Sync is turned off but if I try to turn it on it says its going to remove all the music on my iPod and replace with whats on this particular computer.

How would I go about getting the voice memos off this iPod without syncing anything else?

Also, ultimately, I want to be able to get the voice memo OUT of iTunes so I can convert to an MP3. Any thoughts?

OSX 10.7.3. iOS is current.

Can you not email the recorded voice memos to yourself? In the Voice Memos app, tap on the silver button with the three lines. This should show you all voice memos, and you can tap the Share button to email/mms. The resulting file has a .m4a file extension which can be easily converted to mp3.
