I store a lot of AIFF files on my computer. I'm wondering if there is anyway that the iPod would automatically delete played songs and then refresh from my iTunes library on my iMac?

You can do a Smart Playlist and have it sync just that.
In particular, you want to setup the limit so it's no more than a certain number and that it's only adding stuff that is the least recently played.
