I'll keep this brief, and thank you in advance for your help.

I'm about to buy an iPod from a seller on eBay, who claims it is sealed, brand new in box. The pictures seem legit, so I ran the serial number on Apple's website, and it says the iPod has a valid purchase date. Doesn't that mean the iPod was at some point connected to iTunes and officially registered?

For other sealed Apple products I have purchased via eBay, none of them have had a valid purchase date.

Am I interpreting this right? Could someone help me understand this please. Thanks.

At one point, resellers scanned the UPC, and the serial number to 'authenticate the purchase date', which in your case would be when the original purchaser bought it, likely making it unlikely to get an AppleCare plan.

But I obviously can't speak for Apple and what they might do. I have purchased items before, and never opened them (not from Apple) and been told that I should have opened them up and tested them after I purchased them because they somehow know when the item was purchased. It sucks how vendors do that.
