For the 2019 iMac, anyone has any idea if that is true? I remember someone posted when Mac mini came out that the larger the SDD the faster it is. I wonder if that also is the case for iMac? If so, by how much?

I think there are slight differences but nothing to worry about. All of the internal SSD's are smoking fast.
 
Most SSDs will test a slight bit faster as they get larger. Tom’s and other sites will show colored graphics and you can see this.

Effect on real world performance=0

Unless...

There are users who need a large SSD. Work files for many apps perform better on the boot drive. This is a completely different issue.
