I have an iPad and my trusted devices are my phone and my MacBook. My MacBook being old died recently and it got me thinking… 2 factor feels a bit risky. What happens if I say broke my new iPhone somehow, and lost my trusted device, would that mean I wouldn’t be able to gain access to my account? I kind of don’t like how I can’t just relay on my password to get into my account because there’s a risk of losing my account even if I have my password simply because I don’t have a trusted device

Does apple always force two factor? I don’t remember even adding it. If you created a new Apple ID now would it force 2 factor and also make it so you couldn’t remove it? I just wish they’d give the option to remove it… i really don’t like the feeling of only being able to sign in with another device instead of just a password. I never realized I added it so I can’t remove it now.
 
If you had no trusted device or trusted phone number, even including a family member's you can designate, the steps would be:

"If I can't sign in, how do I regain access to my account?
If you can’t sign in, access a trusted device, reset your password, or receive verification codes, you can request account recovery to regain access to your account. Account recovery is an automatic process designed to get you back in to your account as quickly as possible while denying access to anyone who might be pretending to be you. It might take a few days—or longer—depending on what specific account information you can provide to verify your identity.

If you generated a recovery key, you can use your recovery key to regain access to your account instead. Learn more about using a recovery key."

I’m still confused if I create a new ID now will I have the option to turn it off or is that not possible anymore?
 
Once you turn on two factor authentication, it cannot be turned off. If you don't turn it on, you won't be able to use certain features that require increased security.

 
What are those features you can’t use? I’m not sure I’ll always have a trusted apple device
 
Can you use App Store and iCloud without 2 factor?
Chabig just mentioned that Apple doesn't provide a list of what does and does not work without 2FA. There are many websites out there with descriptions of people's experiences of avoiding 2FA. You could read more about it and decide.
 
I wanted to test it out so I created a new Apple ID and it seems it can’t be turned off now. They require a phone number on sign in and it seems you can’t remove the 2 factor now
 
Apple doesn't enumerate them. But Apple Pay would probably be one.
And Messages, Keychain, Find My, Airtags, Watch to unlock things (Mac, apps [eg. My password manager program on Mac]), Home app, Sign in with Apple.
