I have seen a belkin usb hub that is made for the mac mini. You can either put it under or on top of the mini. My question is if you were to buy 2 of these hubs, do you think they would be able to be stacked on each other to offer more usb ports? If i got 2 it should be able to give me 8 extra ports. Any thoughts or suggestions if anyone has tried this.

yes....you can daisy chain USB hubs up to a max of 127 ports I believe.
 
Yes you can stack and daisy chain, but the Belkin hub is ever so slightly bigger than the Mini. Why they won't make it so the two are flush when stacked is beyond me. But it is an elegant solution.
