I've got my credit card set up in my iphone 13 mini, and use it to pay for the usual things. However, for example, I notice in the New York City subway system that other people just tap their phones and they zip right on through the turnstile in a flash. But in my case, I always must take the extra step of clicking the right side button to confirm payment (after perhaps looking at the phoneto register FaceID? I'm not sure.) Same thing for most purchases thru merchants. It can be cumbersome and annoying.

Presumably I have the ability to do what they other folks are doing and avoid the extra step of clicking to confirm. If so, what settings do I have to change?

For transit, you might want to set up an Express Transit Card in your Wallet: https://support.apple.com/en-us/105123#:~:text=You can select a different,Apple Watch with your passcode.
Oh, super. Thanks. I think I successfully followed the steps to do this. I likely won't be in the NYC subways for at least another week or so before I can test this out, but I'm hopeful.

Is there some similar bypass for ordinary merchants? I dislike having to confirm every purchase of of a cup of coffee or whatever, especially as a left hander who pulls out his phone from his left pocket and usually has to transfer it to my right hand to click the button easily.

Sure, carry your normal debit/credit card instead.
