I've upgraded to iOS5 on my iP4 and iPad2, now I've not jumped on board the iCloud "kool-aid" just yet.

Really, and simply, how secure is it?
Who's liability if my info gets hacked?

As secure as any other service that facilitates you putting personal information on the internet.

Depends on the nature of the "hack." If you're "hacked" by getting a weak password broken, it's your fault.

Also, you choose (or choose not) to use iCloud. If you're concerned about security and privacy, you probably shouldn't sign up for it in the first place.
