Hi, I am considering M2 Pro MacBook Pro 16" (16GB) and M2 Max MacBook Pro 16" (32GB). Currently I have two 4K displays but I may add one more 4K or 5K or dual QHD display later. In this case, is there any point to get 32GB given that the unified memory is also used for video. I am not sure if connecting that many high res displays would take up more memory for applications.

I believe the bigger benefit here is Max vs Pro, Max has better graphic card. Check the specs at apple :
M2 Pro specs state max: internal display full res + 2x6k@60Hz
M2 Max specs state max: internal display full res + 3x6k@60Hz+1x4k
It gets bit complicated with different speeds etc. But I think you must buy Max to be able to add additional display above what you have now.

Indeed, if you want to drive 3 displays then max, and thus implicit 32gb, is hard requirement. At least without using usb display link or some such work less desirable around.
