I am not sure where the OP got the icon, but I got mine here and it looks very similar.

To change the icon, you need to rename it to icon@2x.png and replace the file of that name in the folder /var/stash/Applications.xxxxx/Cydia.app where xxxxx represents a random string. Note that even if the icon file you use is a .jpg you need to rename it with the .png extension; it will work. You may also need to delete the file that starts "com.saurik.Cydia" in the folder /var/mobile/Library/Caches/com.apple.IconsCache and reboot for the change to appear. Alternatively, you can delete the entire /var/mobile/Library/Caches/com.apple.IconsCache folder; it will be recreated at next boot.
