When I simply pull out the cable (when nothing is syncing or backing up, that is), I don't get any warnings, so I assume it's fine.

But I don't know, since there is a button for me to "eject" my iPhone.

I can't seem to find any info about this.
 
It should be fine, as long as nothing is copying (even if you do, iTunes sorts it out with blank spaces in the music app). There is an eject button. If you click on the device on the top left, there is an eject button. I have to use the button for my iPod since it is mounted as a disk and therefore is not gonna enjoy if I unplug it without warning.
 
I've never used the eject button for any of my iPhones or iPads and there's never been a problem so don't worry about it.
