I dont like how Mail.app keeps my mail password saved. Is there a way to set it so it asks me for my password every time I open it. I dont like how people who have access to my desktop can just click on my mail icon and read all my mail with no password. it doesnt seem possible from what ive seen.

I don't think it's possible, no. But why not adding a Password to your actual account on OS X? Then just lock it when you leave the desktop.
Why do you let them having access to YOUR account ??
You can create as many accounts as you want, or use the Guest account.
Those people should not have access to your account.
one particular instance is I had to take my machine into apple to have it worked on. it had a guest account set up but they still required my log in password to my machine.
Weather or not they would take the time to look at my mail is moot. its still shows there are times that people can have access to your machine. log in passwords are very unreliable if stolen also.

For this particular instance, you could backup your ~/Library/Mail folder, then delete it.
In Mail / Preferences you can delete your account.
In Keychains as well.
When the computer is back, just copy the Mail folder from your backup to your Library and recreate your account.
I dont see what the big deal is to be given the option to not automatically log in. they give you the option to not automatically log in on web email. no one could get in unless they had access to that machine that was logged in which is protected by a password so its technically not needed. its still nice to have the option.
