Betas expire so even if there might be a way to go back (and I'm not sure that exists for older betas) you might not be able to keep it for long.

You're best off trying to troubleshoot why this is happening. It's almost certainly an application that's misbehaving, not the OS. Apple expires beta versions of iOS pretty aggressively so you could easily get stuck in a spot where the phone must be restored.
