I was wondering if it would be a good idea to upgrade from Catalina to Big Sur? I have a 2019 iMac with a fusion drive with 16gbs of Ram and I also have a external SSD for time machine backup. I'm just a little hesitant to install as I've read how buggy it can be.

IMO, your best path and least expensive would be to purchase a 2.5" SATA SSD, put it in a 2.5" SATA USB 3.1 enclosure (about $8 on Amazon) and clone your current Fusion drive to the SSD. Booting from external 3.1 USB connected to the SSD would be faster than what you have now. Big Sur is an upgrade over Catalina, probably the worst OS Apple has ever made.

don't upgrade to Big Sur, it will be too slow to use.

SSD with 1GB/s speed is only option for Big Sur.
