I'm confused about what exactly Jailbreakme is or does.

Is it the same as unlocking the phone? If we use Jailbreakme, do we have an "unlocked" iPhone? If not, what's the difference between the two?

In my case, I plan on buying an iPhone this weekend from Apple, then legally adding it to my existing AT&T Family plan (and adding the $19.95 iPhone data plan too).

If I just wanna add extra apps to my iPhone, what should I use? Jailbreakme? Something else?

I'm not sure how you would illegally add your existing AT&T plan..but anyways, just use Independence for jailbreak.

Jailbreak simply "fake activates" your phone, it is not the same as unlock. In your case, it'll work perfectly.
