I've got a Samsung 1TB EVO SSD sitting on an Apricorn Velocity Solo x2 above a Gigabyte RX 560. The fans rarely spin with this graphics card but I'm worried that when they do for a long amount of time it may overheat the SSD. Is this something I should be worried about? Should I swap the SSD for another PCIe slot or not worry at all?

IMO, nothing to worry.
 
Nope. You'd need some crazy level of heat for an SSD to run into issues. Well past the point where the machine would already be throttling itself.
