I was waiting for an i7 refurbished and really wasn't looking for a Mac Mini Server but the regular MM i7's sold out immediately so I grabbed a Server model while they were still available. I'm planning on running an SSD via Thunderbolt as my boot drive (don't want to void the warranty) which would leave me with two empty HDDs.

My question is would I be able to run the two internal drives in a RAID configuration as a backup to my SSD with the OS on it? I'm a photographer and need a decent amount of storage even though I do have a few external HDDs.
 
Well you can certainly use disk utility to configure the two internal drives as a RAID0 or RAID1. You can certainly use CCC to backup the external SSD, but I don't see any reason Time Machine wouldn't also work. You are booting from the external SSD, and the other drives should just look like typical drives or a RAID set and can be set as the TM target.

My setup is 1 SSD internal, 1 HDD internal for time machine, Apple time capsule also with a time machine backup, and a 2 x USB pocket drives that I have a bootable clones on. One of my my external clones are always offsite and I rotate them.
