apple makes me worried about updating to newer software especially if I have no access to certain betas or for some reason I didn't try that certain version. The first time I've heard about shsh blobs was in 2013 when I wanted to downgrade my iPhone 4 but I couldn't as I didn't have the blobs, now I have my iPhone 5s and iPad 4 and I'm a little worried about how the next updates are going to be and a question that always comes in my mind (can I downgrade? What if apple doesn't sign older versions anymore?) so, I just wanted to know if saving the Shsh blobs going to save me in the future "if I'm stuck with a certain iOS" ?? If yes, How to save them ??

No, this doesn't work anymore. Once a new update is released, Apple typically still signs the previous version for up to two weeks. Within that time you can test the update and restore to such an older version.

There's a Cydia tweak (if you're jailbroken) that allows you to restore using iTunes and still maintain the same iOS version.
