I mean, there are plenty of sources while using cydia... Can it happen that there are sources filled with fake apps that are viruses? I know for a fact that there are apps that run like crap on the iPhone and need to be restored... So what about viruses?

Just login once as root with password of alphine and run "passwd" and "passwd mobile" to change it and your all set.
Viruses... well it depends on what you install and who you trust.
I don't know of any at the moment but yes it's possible. You run the same rist as using a mac of getting a virus.
There is about as much inherent risk of viruses on the iPhone as there is on any platform that allows users to install arbitrary pieces of third party software.
So far, none have been reported in the wild, but that doesn't mean that you should go installing everything willy-nilly.
Good security practices dictate that you should, at the very least, ask yourself three questions before installing a piece of software:
1) What evidence do I have that this software is trustworthy?
2) Why do I need this piece of software?
3) What happens if this software is malicious -- what data does it have access to, and how can it hurt me?
If you can't come up with satisfactory answers to those three questions, don't install it.
The jailbreak makes the system partition "writeable" instead of just readable. So I guess it's possible. Kinda.

Whats with all this talk lately with "viruses" on an iPhone..People, iPhone runs OSX.. Seriously, no viruses. How long will it take windows users to accept this?

jmccoullough is incorrect in assuming that OS X is invulnerable to viruses.
Tokiopop is correct in assuming that it can get them.
MikePA is also correct in stating that there are, in fact, no viruses in existence for OS X.
And I am here to say, "That could change in the future, but it will NOT NOT NOT change as a function of market share. That argument is faulty."
...but just use the main sources and DON'T download shady software.

Doubtful, viruses are written for the Windows platform because of the greater degree of ease compared to something with a solid(Unix) base.

Example, download a phone app manager like ilog and then this app secretely phones home or secretly records all info in your phone, passwords, creditcards, etc....How does the Iphone protect against that?
Are there any data loggers for the iphone to record all data coming in and leaving that way we can know whats going on?

The iPhone OS doesn't protect against that. That's one of the things that the user is responsible for preventing.
