Is the S in iPhone 3GS, 4S, 5S, 6S, XS, XS Max Capitalized? On Wikipedia it shows that after the iPhone 4S it becomes lowercased. Just wondering.

On the tech specs on apple.com the S is lowercase after 4S as well. I'm not sure if there is a reason other than cosmetics.
But then when you get to XS it is capitalized again. Strange.

iPhone 3GS and 4S (use capitalized 'S'):

Literally have no idea but I found an article from Macrumors linked below.. it seems Apple just changes it to whatever they want to use. At the top of the compare iPhone models webpage they use XS but at the bottom it is Xs ?♂️

It seems to be whatever Apple feels like that year. The most recent incarnation is actually a 'small caps'.
