Just curious. I know Windows 10 collects certain data like what apps are being used and other sensitive information sent to Microsoft without the user knowing.

Does anyone know or have proof that Catalina 10.15 does the same thing?
I don't think Little Snitch will even help if APPLE is secretly collecting data on it's Catalina users and sending it back to APPLE.
also does MOJAVE possibly do this?
In an age where we all value our privacy just curious.
IF SO I will stop using Catalina in a heart beat and go back to an older macOS or even switch to a Linux Distribution
Thanks for whatever Info you dig up on this subject as I am sure there are others that want to know too.

I do not know what data actually gets back to Apple in Catalina.

I can tell you however that Apple is going out of their way to anonymize data. I think starting with Mojave (poss earlier), Apple started redacting all sorts of private info in their own log system. Info Apple considers private now gets logged as [<private>]. Mojave you could override this setting and actually get info useful for troubleshooting. With Catalina you can no longer override this setting, which makes troubleshooting a problem even more frustrating.

So I do think Apple is taking privacy seriously. But I don't have a lot of data to back that up.

Apple does not collect secretly, you always get an option to opt in or out. Most options are set during first setup of macOS. You can also find all options under System Preferences --> Security & Privacy --> Privacy.
