I'd like to know:

a) How to do a complete backup of my iPhone (and how to access it if something goes bad)

b) Is the cydia store completely working? I know there were some issues when it first came out for iOS 7 ...

just jailbreak it, it is nowhere near as complex as you're making it out to be, if you want to be super duper safe just back up your phone, restore it (unless you have a 5s) and then jailbreak and restore from backup.
 
You can just do a regular backup of your phone. Connect it to you computer and select backup in iTunes.

To use it again, click restore in iTunes and you will get the option to restore from backup. Pick your latest backup and you're good to go.

As for Cydia, it's working just fine. You may have some issues caused by bugs or issues with specific tweaks, but the store is fine
 
My only issue is with the backup ... I know there are some 3rd party apps where you can back up your phone .. I'd rather do that, unless there's a way iTunes can handle multiple backups? IOW, I'm worried that I'll backup now, and then in 4 months I'll backup the "new" jailbroken phone, but that will lose the older pre-jailbreak backup ???

I'm not trying to be dense, honest ... but the issue (as I see it, tell me if I'm wrong) is that once I backup the jailbroken phone, my PRE-jailbroken backup will be overwritten ... And if there's an issue, a jailbroken restore may not work

It will be overwritten. Correct.

But I've never heard of a backup "failing" to restore. I've heard of small parts and files from cydia/tweaks being left over but that's it.

But now im having a new problem.

i just spent about 2 hours backing up my iPhone to iTunes, and when i did the restore (because jailbreak doesn't allow OTA updates of iOS), i got an error that over 100 apps can't be found ...?

if i restore from iCloud backup will that be ok?

Browse to where the backup is located (google to find the location) and make a copy of it on your desktop or something

And if you want to restore from that backup, you just place it back to where all the backups were originally at

Did you transfer purchases, make a backup, and sync before you restored?

It's saying 100 apps cannot be found because you don't have those apps in your iTunes library

Restoring from iCloud backup should be fine. It'll probably just redownload your apps from the AppStore and install them
